The maximal production of galactooligosaccharides (GOS) from lactose by (β-glycosidases from the hyperthermophilic archaea, Sulfolobus solfataricus (LacS) (derived from lacS gene) and Pyrococcus furiosus (CelB) (derived from celB gene) was optimized.
